Wild Pork Meatballs

Ingredients

1 ½ Lbs. Wild Pork

½ Lb. Pork Belly

1 tsp. Caraway/Fennel

1 Tbs. Red Chile Peppers

1 tsp. Garlic Powder

1 tsp. Onion Powder

2 tsp. Dried Oregano

1 tsp. Dried Basil

1 tsp. Parsley

2 tsp. Kosher Salt **Add salt just before cooking

1 tsp. Black Pepper

¼ Cup Breadcrumbs

¼ Cup Parmesan

2 Tbs. Milk

1 Egg

Preparation

Trim the wild hog meat to remove excess fat, sinew, and silver skin. Chop into small cubes to fit in your grinder, place in a large bowl.

Cut the pork belly into the same size cubes as the hog meat and mix in with the hog meat. Set this mixture in the freezer for 15-30 minutes until the outside becomes slightly stiff.

Once the meat is sufficiently cooled, grind the mixture evenly using a large hole die.

Add in the milk to the breadcrumbs and set aside.

pour all the spices over the meat and gently mix

add the cheese and breadcrumbs and gently mix some more. Do not overmix the meat, just enough to spread the ingredients evenly.

Sit the mixture in the refrigerator for another 15-30 minutes.

Remove the mixture from the fridge and form into even balls
